There’s something about Belize that feels both wildly untamed and incredibly welcoming. It’s a country where the jungles are alive with howler monkeys and hidden waterfalls, and just a short hop away, you’ll find powdery beaches, turquoise waters, and the world’s second-largest barrier reef. It’s compact, English-speaking, and easy to explore—yet filled with the kind of rich, natural beauty that feels larger than life. Days 1–4: Barefoot Bliss at Blu Zen, Caye Caulker
Our journey began on the coast, flying into Belize City and heading straight to Caye Caulker, one of my favorite little islands on earth. With its laid-back vibe and “Go Slow” motto, it’s the kind of place where time softens and toes stay sandy.
We stayed at Blu Zen, a stylish eco-chic resort on the quiet north end of the island. The panoramic sea views, open-concept condos, and saltwater pool made it hard to leave. Mornings started with gentle water aerobics, and afternoons were made for lounging in a hammock or biking the sandy paths in search of ceviche.

Snorkeling the Reef
The Belize Barrier Reef did not disappoint. We snorkeled in the crystal waters of Hol Chan Marine Reserve and Shark Ray Alley, swimming with rays, sea turtles, and nurse sharks. It’s like floating through a living, breathing aquarium.

Private Fishing Charter with a Local Twist
One afternoon, we chartered a private fishing trip—just us and a local crew who knew exactly where to go. Not only did we fish in the reef, but the crew dived for fresh lobster, which they cleaned and grilled right on the beach for dinner. It was as authentic and delicious as it gets.
The Great Blue Hole from Above
We also took a private flyover tour of the Great Blue Hole, and the view was beyond anything I expected—an endless swirl of blues, with that deep, inky circle in the center. Seeing it from the sky was one of the most unforgettable moments of the trip.

Days 5–7: Into the Jungle at Blancaneaux Lodge
From island paradise, we shifted gears—flying by private charter directly to the airstrip at Blancaneaux Lodge. In less than an hour, we went from reef to rainforest.
Owned by Francis Ford Coppola, Blancaneaux Lodge is tucked deep in the Mountain Pine Ridge Forest Reserve. Picture thatched-roof villas, riverside cabanas, and hammocks strung between ancient trees. Our cabana overlooked the Privassion River, and the only sounds at night were the rustling palms and the distant howl of monkeys.

Jungle Adventures & Wildlife
We spent our days hiking through dense forest, swimming in hidden waterfalls, and spotting wildlife—ocelots, tapirs, colorful parrots, and more hummingbirds than I could count. A guide even pointed out jaguar tracks on one of our hikes.

Spa, Wine & Jungle Luxury
After days of exploring, we relaxed at the open-air Waterfall Spa, then enjoyed wood-fired pizzas and handmade pasta at Montagna Ristorante, paired with wine from the Coppola cellar. Rustic luxury doesn’t get much better than this.

Day 8: Homeward Bound
On our final day, we enjoyed one last riverside breakfast before driving back to Belize City. The road twisted through mountain ridges and tiny villages—quiet and scenic. As we boarded our flight home, I couldn’t help but feel that Belize had given us not just a trip, but a story.
